INGREDIENTS: 60 ml Espadín mezcal 30 ml hibiscus reduction 20 ml lemon juice 2 dashes cacao bitters PREPARATION: Shake in a cocktail shaker with ice, strain finely into a coupe glass. Garnish with crystallized hibiscus petals.

INGREDIENTS: 50 ml Espadín mezcal 40 ml fresh cucumber juice 60 ml pink grapefruit soda PREPARATION: Serve in a highball glass with ice. Add the mezcal first, then the remaining ingredients. Garnish with a cucumber slice and a grapefruit twist.

INGREDIENTS: 50 ml Espadín mezcal 80 ml pineapple juice 15 ml cinnamon syrup 20 ml passion fruit purée or foam PREPARATION: Shake with ice and serve in an old-fashioned glass with fresh ice. Garnish with dehydrated pineapple and a cinnamon stick.
