Mezcal from Oaxaca is an iconic artisanal spirit, considered the birthplace of this beverage in Mexico, famous for its great diversity of agaves (such as EspadÃn, Tobala and Tepeztate) and traditional processes that include cooking in earth ovens, grinding with a tahona and fermentation in wooden vats, resulting in smoky and complex flavors, with places like Santiago Matatlán being known as the world capital of mezcal.
